Everyone’s Favorite Seven Layer Bean Dip

Let’s face it – one of the best things about a party is the food. Well, at least for me. I love all of the small bites you get to snack on while spending time with your friends or family. When the host offers up yummy treats, there’s nothing better. One of my favorite snacks at any party is always the dip. There are so many varieties and variations – and I’m a fan of all of them.

Seven layer bean dip has been around for as long as I remember. It’s delicious, and definitely a crowd pleaser. This particular recipe, though, was introduced to me many years ago, back when my younger sister was in high school. She was on the dance team, and throughout the year there were a ton of events and gatherings. The events were always pot-luck style, so each family got to bring a dish to share.

One of the mothers brought this dip to a tailgate, and it totally blew every other seven-layer bean dip out of the water. Of course I had to get the recipe immediately! I’ve been making it ever since. Every time I bring it to a party, or make it for a party I’m hosting, everyone raves about it, and there is never any left (which is always a great feeling). There’s an added (not so) secret ingredient makes this dip next level. Try it for yourself, and you’ll see why this definitely is everyone’s favorite seven layer bean dip.

Ingredients:

  • 1 (15 oz) can refried beans, heated
  • 1 cup sour cream
  • 1 package taco seasoning
  • 1 cup tomatoes, diced
  • 1 (4.25 oz) can diced green chilies, drained
  • 1.5-2 cups shredded cheese
  • 1 (2.25 oz) can sliced black olives
  • 1/2 cup green onions, chopped

Directions:

In a 13×9 dish, start by spreading the heated beans and covering the dish for the first layer. Mix the sour cream & taco seasoning together in a separate bowl first, then spread over the beans. Layer each of the remaining ingredients in order. Serve with tortilla chips.

Tips:

  • Heating the beans first helps make them easier to spread.
  • There will still be some juice remaining after draining the green chilies, but it will keep the dip from becoming watery.
  • This dip can be made the day before, but I wouldn’t suggest any further advance prep than that.
