Chicken Morango

You can ask anyone that knows my mom, and I’d be willing to be that each and every person would say that she is an amazing cook. Everything she makes is delicious – seriously. That’s why I wanted to share one of everyone’s favorite dishes that my mom makes – Chicken Morango.

Growing up, my mom worked full time (sometimes two jobs) and still managed to make dinner just about every night. Don’t ask me how she did it – I think she might be a unicorn. In any case, Chicken Morango was one of the meals in the regular rotation. It became everyone’s favorite, and not just within our family. All of my friends and all of my sister’s friends would always request Chicken Morango when they came over for dinner.

There’s something about this dish that is so comforting. It’s a great weeknight meal, since it comes together in about 30 minutes, and it’s a great healthy option that’s full of flavor. My mom has been making this recipe for over 30 years, so it’s definitely stood the test of time. I hope you try it out and add it to your own meal rotation!

Ingredients:

  • 1.5 lbs boneless, skinless chicken breast, cubed in 1″ cubes
  • 2 Tbs olive oil
  • 1 medium onion, sliced thin (or 6 green onions, sliced)
  • 1 green pepper, sliced thin
  • 29 oz can of petite diced tomatoes
  • 1 packet of Good Season’s Italian Dressing Mix
  • 1 Tbsp dried basil
  • White or brown rice

Directions:

  1. Cut chicken into bite sized pieces.
  2. Heat olive oil in a medium saute pan over medium heat.
  3. Add onion, bell pepper, and chicken to the pan. Saute for about 10 minutes until the onions are translucent, and the chicken is cooked through.
  4. Pour in tomatoes, basil, and Italian seasoning packet. Stir to combine.
  5. Simmer on low, uncovered for 20 minutes.
  6. While the chicken is cooking, cook rice according to package directions.
  7. Serve chicken and sauce over rice.

*If you have a gluten intolerance, you can substitute Italian seasonings, such as oregano, basil, and parsley for the seasoning packet, which contains wheat. Also, remember to add in 1 tsp of salt.
