Apple Cake

I’m just going to come out and say it – I’m not a fan of apple pie. I know, I know, it’s a classic and everyone loves it, but I do not. Now, I love apples, and other apple desserts, it’s just the mass amounts of slimy, mushy apples do not appeal to me. (Sorry for that description). Hey, if you love apple pie, you do you. I’m not here to stop you. I’m just here to give you an alternative apple dessert that’s totally delicious – Apple cake.

This apple cake recipe is an oldie, but definitely a goodie. It came from a friends of my parent’s grandmother. This recipe is easily 40 years old, so you know it’s gotta be awesome. Grandmas just know how to bake – it’s a fact.

Even though I’ve had this apple cake plenty of times, I’d never actually made it myself until now. I laughed when I saw the amount of oil and sugar in the recipe. You can always tell an old recipe by the amount of fat and sugar in it. You’ll see what I mean when you get to the ingredients.

Even though the amount of sugar seems like it might be a lot, the cake is perfect, and not overly sweet in any way! I sometimes have the tendency to cut the amount of sugar in cakes and muffins since I find them pretty sweet, but I left this recipe just as is.

This apple cake is a crazy combination of everything you want in a baked good. It’s fluffy and moist, flavorful, and has great texture – it’s a total winner! The cake is delicious right out of the oven, but it is even more moist the second day. Plus, you can store it on the counter, so no need to take up valuable fridge space – you’re welcome.

Apple cake can be served with vanilla ice cream, caramel sauce, or whipped cream, but it doesn’t need anything, honestly. It’s crazy delicious all on it’s own. Like I said, this is the perfect alternative to apple pie (whether you are a fan of apple pie or not). Try it out next time and let me know what you think!

Ingredients:

  • 1 cup vegetable or canola oil
  • 1 3/4 cup sugar
  • 3 eggs
  • 2 cups sifted flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1.5 tsp cinnamon
  • 4 apples, peeled and thinly sliced
  • 1/2 cup walnuts, chopped

Directions:

  1. Preheat oven to 350°. Grease and lightly flour a 13 x 9 cake pan. Set aside.
  2. In a large bowl, pour in oil and sugar. Mix together.
  3. In a small bowl, beat eggs until light and fluffy. Add into the bowl with the oil and sugar and mix well.
  4. In a third bowl, sift flour, cinnamon, baking soda, and salt together. Add to oil/sugar/egg mixture and stir to combine.
  5. Peel and thinly slice apples. Gently fold the apples and walnuts into the batter.
  6. Pour into the greased and floured 13 x 9 pan.
  7. Bake for 55 minutes. Check with a toothpick. Cook for an additional 5 minutes if needed.
