Eat with Kristen’s Cauliflower Gnocchi

This Cauliflower Gnocchi is a perfect one pan dinner full of flavor, with minimal clean up – what could be better?

Ingredients:

  • 1 small yellow onion, diced
  • 2 cloves minced garlic
  • 1/2 lb mild Italian sausage 
  • pinch of red pepper flakes
  • 1 tsp garlic powder
  • 1 package cauliflower gnocchi, Trader Joes
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach 
  • 1 jar of tomato and basil pasta sauce

Directions:

  1. Dice onion and saute over medium heat with olive oil and minced garlic until translucent and fragrant.
  2. Add Italian sausage and cook until brown, 5-6 minutes.
  3. Sprinkle with red pepper flakes and garlic powder.
  4. Remove from the pan, drain, and set aside.
  5. Cook cauliflower gnocchi over medium heat in the same pan with a drizzle of olive oil for about 5 minutes.
  6. Once golden, add sausage and halved cherry tomatoes. Let cook for a couple more minutes.
  7. Then add sauce and fresh spinach. Cook until heated through and then ENJOY!
