This Cauliflower Gnocchi is a perfect one pan dinner full of flavor, with minimal clean up – what could be better?
Ingredients:
- 1 small yellow onion, diced
- 2 cloves minced garlic
- 1/2 lb mild Italian sausage
- pinch of red pepper flakes
- 1 tsp garlic powder
- 1 package cauliflower gnocchi, Trader Joes
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach
- 1 jar of tomato and basil pasta sauce
Directions:
- Dice onion and saute over medium heat with olive oil and minced garlic until translucent and fragrant.
- Add Italian sausage and cook until brown, 5-6 minutes.
- Sprinkle with red pepper flakes and garlic powder.
- Remove from the pan, drain, and set aside.
- Cook cauliflower gnocchi over medium heat in the same pan with a drizzle of olive oil for about 5 minutes.
- Once golden, add sausage and halved cherry tomatoes. Let cook for a couple more minutes.
- Then add sauce and fresh spinach. Cook until heated through and then ENJOY!
