There are few things in my kitchen I love more than my slow cooker. It’s just amazing to be able to take 10 minutes, to throw a few things together in the slow cooker, and come home hours later to a perfectly cooked, delicious meal. Technology, right??
Growing up, my mom relied on the slow cooker a lot. She was a working mom and always put a home-cooked meal on the table every night. I think the slow cooker was her secret weapon in a way! Over the years, she made a lot of pot roast in a few different versions. Pot roast is such a comfort meal, and I always looked forward to it.
This is one of my favorite meals that I make in the slow cooker. It’s only 6 ingredients, takes only a few minutes of prep time, and it is the most flavorful pot roast you’re ever going to have. I promise!
Ingredients:
- 2-3 lb. bottom round roast
- 1 lb. potatoes
- 3-4 carrots
- 1 packet brown gravy mix
- 1 packet ranch mix
- 1 packet Italian dressing mix
Directions:
- In a measuring cup, measure out 2/3 cup water. To that, add the three seasoning packets. (Make sure to measure out the water first or your ratios will be off).
- Wash the potatoes, peel if desired, and place in the bottom of the slow cooker.
- Place the roast (fat side up) on top of the potatoes. (By placing the fat side up, it will help to baste the roast as it cooks and make it extra moist and tender.
- Slice and cube up the carrots and place around the sides of the roast.
- Pour the water & seasoning mixture (your gravy) over the top of the roast. Cook on low for 8- 10 hours. Enjoy!
Tips:
- No need to add any additional salt or pepper to the roast – the seasoning packets add plenty of flavor. You could also choose the low sodium brown gravy packet, or I’ve used a packet of onion soup mix in place of the gravy mix. Equally delicious.
- This is a complete meal in itself, but if you want a little carb on carb action, you could always serve over rice or egg noodles.
