This Avocado Pesto is perfect for one person, but can easily be doubled if needed. Using the ingredients below, this makes 1-2 servings, depending on how saucy you like your pasta!
Ingredients:
- 1 Soft avocado
- 1 Container of basil (about 10 leaves)
- 1 Small clove of garlic
- 1/2 Juiced lemon
- 1 Tbsp olive oil
- 1/2 C Water
- 1 Tbsp nutritional yeast
- S&P to taste
Directions:
- Combine all ingredients in a blender.
- Mix for one minute until all ingredients are well combined.
- Serve over any warm pasta of your choice.
**My favorite add-ins are diced heirloom tomatoes and pumpkin seeds. This avocado pesto also tastes great served cold, as a veggie or chip dip.
