Nora’s Vegan Avocado Pesto Sauce

This Avocado Pesto is perfect for one person, but can easily be doubled if needed. Using the ingredients below, this makes 1-2 servings, depending on how saucy you like your pasta!

Ingredients:

  • 1 Soft avocado
  • 1 Container of basil (about 10 leaves)
  • 1 Small clove of garlic
  • 1/2 Juiced lemon
  • 1 Tbsp olive oil
  • 1/2 C Water
  • 1 Tbsp nutritional yeast
  • S&P to taste

Directions:

  1. Combine all ingredients in a blender.
  2. Mix for one minute until all ingredients are well combined.
  3. Serve over any warm pasta of your choice.

**My favorite add-ins are diced heirloom tomatoes and pumpkin seeds. This avocado pesto also tastes great served cold, as a veggie or chip dip.
