Rainbow Toast

A fresh, delicious, colorful treat that’s perfect for breakfast (or really any time of day). This recipe is a copy cat version of something I had at a local restaurant. (Shout out to First Watch)! It was one of their seasonal menu items, and I was lucky enough to visit at the right time.

Now, while this may not be the original (their home-made granola is ahh-mazing), this comes very close and hits all the same notes. You could easily swap out the granola for shredded coconut or chopped nuts if you wanted. It’s always nice to have a nice, light meal to start your day that isn’t the everyday cereal or muffin. Play around and find your favorite combo!

You’ll need:

Rainbow Toast
  • 2 slices of brioche bread
  • 4-5 fruits in varied colors (I chose raspberries, mango, kiwi, blueberries, and purple grapes)
  • 1/2 cup ricotta cheese
  • 1-2 tsp honey or agave
  • granola of your choice

Directions:

Toast brioche bread until golden. In a small bowl, mix 1tsp honey or agave with ricotta cheese. Spread over brioche.

Arrange fruit on top of ricotta mixture to your liking.

Drizzle with a bit more honey or agave, and sprinkle granola on top.

Tips:

  • You’ll want to make sure to get a good toast on the brioche. You don’t want it to get soggy once you top it with the ricotta mixture.
  • Use whatever fruits you like best. Swap out the kiwi for green grapes, the raspberries for strawberries, the mango for banana – whatever makes you happy!
  • Get creative – try mixing in a dash of cinnamon into the ricotta mixture, or maybe topping with mini chocolate chips
