This dairy free tomato soup is perfectly creamy, and incredibly satisfying.
Ingredients:
- 12 oz tomato paste
- 2 cans coconut milk
- 2 tsp garlic
- 2 tsp oregano
- 2 tsp basil
- sea salt+pepper
- fresh rosemary
Directions:
- Add all ingredients to pot, bring to a “bubble” while stirring frequently over medium heat.
- Strain out any pieces of cooked rosemary before serving.
- Serve with fresh pepper, fresh rosemary, and homemade gluten free croutons.
- For the croutons: mix olive oil + seasonings in a bowl rip or cut bread to desired size, roll in bowl and spread on a baking sheet Bake at 350 for 10-15 minutes.
You can also serve with gluten free/dairy free grilled cheese ft. @canyonglutenfree bread and @daiyafoods cheese slices.
