The Healthy Hollows Rosemary Tomato Soup

This dairy free tomato soup is perfectly creamy, and incredibly satisfying.

Ingredients:

  • 12 oz tomato paste
  • 2 cans coconut milk
  • 2 tsp garlic
  • 2 tsp oregano
  • 2 tsp basil
  • sea salt+pepper
  • fresh rosemary

Directions:

  1. Add all ingredients to pot, bring to a “bubble” while stirring frequently over medium heat.
  2. Strain out any pieces of cooked rosemary before serving.
  3. Serve with fresh pepper, fresh rosemary, and homemade gluten free croutons.
  4. For the croutons: mix olive oil + seasonings in a bowl rip or cut bread to desired size, roll in bowl and spread on a baking sheet Bake at 350 for 10-15 minutes.

You can also serve with gluten free/dairy free grilled cheese ft. @canyonglutenfree bread and @daiyafoods cheese slices.
